There’s a building in Thornton, IL that houses 160 years of alcohol production history. Located in Illinois’ oldest standing brewery, Thornton Distilling Company crafts exceptional single malt whisky and other spirits using the same production floor that was in operation during Prohibition, and limestone-filtered water from the site’s original artesian well dating back to 1857. They call this picking up where their predecessors left off.
Never content in going the traditional route, Head Distiller Ari Klafter earned a Master’s degree in Brewing and Distilling from Heriot-Watt University’s International Centre for Brewing and Distilling in Edinburgh, Scotland. Prior to joining Thornton, Ari served as Assistant Distiller at Privateer Rum in Ipswich, MA. His time living and studying in Scotland and passion for single malt whisky informs his approach to distilling each day. Ari and his production team pair traditional distilling techniques — double pot distillation, off-grain fermentations, and lengthy fermentation times — with the indomitable pursuit of novel flavors in malt whisky, whether it be incorporating fruit-forward dark malts from Belgium, freshly dumped kosher rum casks, or regional pale malt smoked with hand-cut local peat dried at the distillery. Ari also uses the water from TDC’s 160-year-old limestone-filtered subterranean artesian well at every step of the process, from mashing to proofing and even cooling the stills. Good Deeds Whiskey will be Thornton’s first malt whisky release. In addition to the single malt patiently maturing in the distillery’s rickhouse, Thornton Distilling also offers its lineup of Dead Drop Spirits, including Gin, Pecan Bourbon, Kosher for Passover Rum, Old Fashioned, and Louchifer Absinthe Blanche — all kosher certified and currently distributed in NY, IL, NJ and IN. |
